Today I am sharing a watermelon and tomato salad recipe that I pinned from Pinterest and decided to try it out.
After all, that is why we pin right?
It was a strange combination, and I was a little hesitant
but I have to tell you
it was
delish!
The only thing I would do different next time around is
buy a seedless watermelon.
That part was not fun picking out all the seeds.
The combination of watermelon and tomatoes is what was throwing me off a bit.

Here is the recipe:
ingredients:
¼ cup red wine vinegar
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ cup extra-virgin olive oilSalad
1 small cucumber, peeled
½ small red onion
3 heirloom tomatoes (about 12 ounces total), cut into bite-size chunks
3 ½ cups peeled seeded bite-size watermelon chunks
1 red bell pepper, cut into bite-size chunks
7 ounces French feta cheese, cut into ½-inch cubes
1 cup fresh mint leaves, thinly sliced
directions:
MAKE THE dressing: Whisk the vinegar, salt and pepper in a medium bowl to blend. Gradually whisk in the oil to blend well. Set aside.
Serve chilled…

I’ve been making a feta-watermelon salad with almost the same ingredients except no tomatoes or peppers for several years and it is always a hit. I might have to try those add-ons one of these times. It’s that salty sweet that I love so much.

This sounds aweome, would it make a big difference if I used goat cheese, instead of the feta? My husband is not a fan of feta, I know I know, but I have had him for 43 years, guess I’ll keep him.
