Yummy, yummy, yummy!
Hi there everyone. Today I am sharing how to make buckeyes. If you know me at all, you know I LOVE peanut butter and chocolate.
I am a newb at the baking, as you know I stick to basics most of the time.
But this year I have tried for the first time Home made peppermint bark, which was a hit, and now I thought I would try some buckeyes. I have my Bunco Chrismtas party tonight so my friends are my guinny pigs.
Probably one of the easiest cutie pies you can ever whip up.
Throw it all in a bowl,
whip it up with your mixer
roll and chill.
After chilled, dip in chocolate.
I did all sorts of dips as you can see. Half dipped, whole dipped, barely dipped,
I just had fun dipping.

I love the little snowflake cupcake liners and toothpicks I picked up from the dollar tree.
Buckeye Recipe:
3 oz. butter, softened at room temperature
2 cups of powdered sugar
1 tsp. Vanilla
1 cup of smooth peanut butter
⅓ tsp. salt
In a mixing bowl, combine the softened butter, peanut butter and powdered sugar, vanilla and salt.
Mix on medium speed for a1-2 minutes until very smooth and well combined. Taste of couse and adjust the sugar and salt to your liking.
Roll the peanut butter into small balls about 1 inch in diamter and place them on a cookie sheet lined.
Once firm, melt the cholcolate candy in a microwave accordingly {careful not to burn YUK}
Stick a toothpick in your buckeye and start dipping.
Place back in the fridge to firm them up. I did it overnight. Great for a party and everyone will enjoy.

COOKIE RECIPE
Mix 1 cup of PB
1 cup of sugar
1 egg
1 teaspoon of vanilla
Bake @ 350 degrees for 10 minutes. No need to grease the pan. You can also use parchment

Oh Debbie, You did a fantastic job and made me want to make some. I used to make these by the dozens. That is probably whey we are both diabetic now. This is my favorite keep or giveaway candy. Don’t you just love DT?

Made the flourless peanut butter cookies today and they were delicious. My husband is diabetic so I substituted Splenda for the sugar. Will definitely be making these again and again. Thanks for your recipe.

These are awesome! I altered the recipe just a bit. I use half peanut butter and half cooke butter and add half cup of oats. Bake for exactly 10mins. They turn out perfect! So quick and easy! I will make these forever, My father doesn’t eat chocolate and these have been by far the best cookie I’ve made for him that he LOVES!
