Oh boy here I go again!
Today, I am sharing two ingredients Pumpkin Spice cookies~
It’s pumpkin baking time for me.
Last year I stumbled on a recipe for pumpkin muffins.
I couldn’t believe there were only two ingredients.
A simple cake mix
and a can of pumpkin.
No eggs,
no oil
no nothing else.
How could they possible bake and taste no less?
Well, I am here to tell you they are absolutely delicious and you will never go back to adding all the extra ingredients again.
Besides, pumpkin is a lot healthier for you.

After my summer recipes such as cool whip cookies, and cool whip bundt cake it was time to bring in the Fall baking and aroma’s.
Tonight is bunco night and all us gals bring a treat or appetizer to munch on.
I thought with Fall in the air these cookies are sure to be a hit.
All you need is your cake mix of choice, which as you can see I used a Duncan Hines spice cake,
and a 29 oz. can of pure pumpkin by libby’s.
On a cookie sheet lay down some parchment paper
and a spoon full of your cake and pumpkin combination
Now of course if you want to add just a few more calories, you can use frosting as I did, a cream cheese frosting was my choice.
You can add nuts, or chocolate chips, etc..whatever your pallet desires.
Bake at 350 degrees for approximately 20 minutes. Let cool, frost and serve. Your cookies will be soft, moist and delicious. A cake like texture.

I’ve made muffins this way for years. Sometimes I make these 3 ingredient muffins by adding 1 egg or shredded carrots – I have to get vegetables into that man somehow. The chocolate muffins are really good with mini chocolate chips.

Yeah!!! It’s pumpkin season. I thought it would never get here. OK, actually, I try to hold off on my first pumpkin binge until the 22nd, but I don’t always make it. I will very, very, definitely be trying these. I actually have every ingredient except the frosting in the pantry right now.

Well slap me and call me Nancy. How simple is that. I filled my pantry this weekend, and I have spice cake mix and canned pumpkin as we speak. I had a friend that mixed spice cake mix, 1 can of Dr. Pepper and 1–20 oz can of apple pie filling, mix and bake as directed. Whip cream on top of course. It was delish too. Can’t wait to give this a try. Thanks Debbie

Those sound really good, Debbie! I’ll have to figure out the calories to be sure, but without eggs and oil, they should be fairly low-calorie. We are into a lifestyle change around here, otherwise known as “payback is a B…….” after over-indulging for too long! YUK! Well, it’s good from a health standpoint, anyway!

When they are warm they are gooey but then after a bit at room temp they are just super soft.
